Gourmet Olive Tapenade
Spanish Rice
Ingredients
1 4-ounce jar of Olive Affairs Gourmet Olive
Tapenade
1-2 Tbs. olive oil
1 ½ cups minced onion
¾ tsp. Salt
1 large bell pepper, minced
3 medium sized ripe tomatoes, peeled, seeded and minced
(or 1 cup canned tomatoes, drained and chopped)
freshly ground black pepper
cayenne
minced fresh parsley
6 cups cooked rice
1. Heat the olive oil in a large deep skillet. Add the onion and half
the salt,
and sauté over medium heat for about five minutes, or until the onion
begins
to soften.
2. Add bell pepper. Sauté over medium heat for another five minutes, or
until the pepper is just tender.
3. Stir in the cooked rice, tomatoes, remaining salt and the Olive
Tapenade.
Season to taste with freshly ground black pepper and cayenne.
4. Serve hot, topped with minced fresh parsley.
